This is a very easy and simple yam bread…yet is very colorful due to the yam and very tasty. You can use as a sandwich bread or just with some butter on it.
Ingredients:
1 medium yam
2/3 cup water
1 tablespoon butter
2 ¼ cups bread flour
3/4 teaspoon salt
1 tablespoon sugar
1½ teaspoons yeast
Method:
Cook the yam in the microwave oven by wrapping the yam in a paper towel and cook for approximately 2-3 minutes depending of the strength of your microwave oven. With a fork, remove the yam (you don’t need to smash, since the bread machine will do when at the kneading cycle).
Follow the instructions of your bread machine. In the mini bakery Zojirushi, add all liquid ingredients first, the yam (approximately 1/3 cup) and the dry ingredients. Set the machine to regular bread and crust control to light. The dough will be slightly sticky…do not worry. After the bread is done remove it from the baking pan and let it cool before slicing it! You will have a very rich color bread that taste great!
The “meat” of the yam ranges in color from white or yellow to purple or pink in ripe yams. Yams are rich in vitamin C, dietary fiber, vitamin B6, potassium, and manganese. The 3 first compounds mentioned promote good health and the high potassium and low concentration of sodium is likely to produce a good balance between potassium-sodium in your body protecting you against osteoporosis and heart disease. Furthermore, yam has a lower glycemic index than potato, indicating that yam provide a more nourish form of energy and give a better protection against obesity and diabetes.
