This is a very, very tasty bread. The Kalamata olive adds a lot of flavor to this bread. Again it is so easy and simple to make it with the bread machine. This bread is great with pasta.

Ingredients:

¼ cup brine from olive and complete to ¾ cup with water
1 tablespoon olive oil
2 cups bread flour
¾ teaspoon salt
1 tablespoon sugar
½ tablespoon gluten
¾ teaspoon dry basil
1¼ teaspoons yeast
½ cup Kalamata olives roughly chopped

Preparation:

Follow the instructions of your bread machine. On the Zojirushi (1 lb), place the brine and the water first at the bottom of the bucket and add the dry ingredients except the Kalamata olives. Select the setting for French bread. Once the machine beeps add slowly the olives and let the cycle finish. The Kalamata olive gives the bread a very nice flavor and it goes well with any kind of cheese.
The gluten enhances the elasticity of the bread by giving an extra texture to the bread.

Kalamata olives are named after a city in Greece, Kalamata. The city of Kalamata is well known not only for the succulent dark olives but for the honey-eyed figs and pasteli, which is a sesame seed candy.
